Valerie, these are amazing! Especially that first project--love! To answer your question on my blog, I do use non-dairy margarine and it comes out great! I buy the Earth balance tubs. I do just about all of my baking non-dairy, so if you ever need substitutions, feel free to ask!
Really love the butterflies on that last page - but they are all so pretty. That window is such fun, did you make it a while ago? I seem to remember you having another.
